Instructions
Mix wheat flour, coarse whole wheat flour and salt in a bowl.
Add half of the milk and whisk into a lump free batter.
Whisk in the rest of the milk.
Add the eggs and whisk until smooth.
Let the pancake batter rest for about 30 minutes.
Melt a little butter in a frying pan over medium heat.
Pour a ladle of batter into the pan and gently tilt the pan so the batter spreads evenly.
Cook the pancake until set on top and golden underneath.
Turn the pancake and cook briefly on the other side.
Crack an egg over the pancake and lower the heat slightly.
Let the egg cook to the desired consistency.
Fold the edges of the pancake in toward the egg.
Toss lamb's lettuce with olive oil, lemon juice, salt and pepper.
Serve the pancakes with the salad.
