Instructions
Split the vanilla bean lengthwise and scrape out the seeds.
Add vanilla seeds, vanilla bean and cream to a saucepan.
Bring to a boil and remove the saucepan from the heat.
Whisk egg yolks, sugar and cornstarch together in a bowl.
Remove the vanilla bean from the cream.
Pour the warm cream little by little over the egg mixture while whisking vigorously.
Return everything to the saucepan.
Heat while stirring constantly until the vanilla custard thickens.
Pour the custard into a bowl.
Cover with plastic wrap directly on the surface.
Cool completely in the refrigerator before using.

Tips & tricks
Stir constantly as the custard heats. This prevents the egg yolks from catching on the bottom and making the custard grainy.
