Instructions

Finely chop shallots and garlic.

Heat olive oil in a saucepan.

Cook shallots and garlic until soft and glossy.

Add chopped tomatoes, water, vegetable stock cube, tomato paste and sugar.

Bring to a boil and let the soup simmer for about 10 minutes.

Blend the soup smooth with an immersion blender if you want a smoother texture.

Season with salt and pepper.

Boil the eggs to the desired consistency.

Serve the tomato soup warm with boiled egg.
