Whisk eggs and sugar well together.

Add milk and stir into an even mixture.
Add vanilla sugar, baking powder and melted butter.
Stir in wholegrain spelt flour and sifted spelt flour until you have a lump-free batter.
Avoid stirring longer than necessary.
Let the batter rest for 15 minutes.
Cook the waffles in a hot waffle iron until golden and cooked through.
