Mix flour, baking powder and vanilla sugar in a bowl.
Rub in the butter until the mixture resembles coarse sand.
Add sugar and egg.
Work the dough lightly until smooth and pliable.
Wrap the dough and refrigerate for at least 30 minutes.
Roll the dough into an even length and cut it into pieces.
Shape the pieces into rounds and place them on a baking tray lined with parchment paper.
Flatten the cookies lightly.
Lightly whisk the egg white.
Brush the cookies with egg white.
Sprinkle with chopped almonds.
Bake the cookies in the middle of the oven at 200 degrees for about 10 minutes, until lightly golden.
Cool the Serina cookies on a wire rack before serving or storing.
