Instructions
Bring water, sugar, split vanilla beans, cinnamon sticks and star anise to a boil.
Let the spiced syrup simmer for 10 minutes.
Turn off the heat.
Place the plums in the syrup.
Add lemon juice.
Let the plums steep for 5 to 10 minutes, until heated through but still holding their shape.
Transfer the plums to clean warm jars with tight lids.
Bring the syrup back to a boil.
Pour the hot syrup over the plums until the jars are completely full.
Close the lids and store the plums cool.
