Instructions
Mix flour, salt, sugar and cinnamon in a bowl.
Add half of the milk and whisk to a lump free batter.
Whisk in the rest of the milk and the eggs.
Let the pancake batter rest for about 30 minutes.
Melt a little butter in a frying pan over medium heat.
Pour a ladle of batter into the pan and gently tilt the pan so the batter spreads evenly.
Flip the pancake when the top has set and the underside is golden. Cook briefly on the other side.
Mix sugar and cinnamon for the topping on a plate.
Place the cooked pancake on the cinnamon sugar mixture and roll it up.
Cut the pancake into pieces and serve.
