Tips & tricks

Season the red cabbage at the very end. A little extra vinegar, sugar or salt can adjust the balance depending on how sweet the cabbage and apples are.

Did you know?

Norwegian red cabbage gets its classic balance from sweetness, acidity and enough cooking time for the cabbage to soften. Apples add natural sweetness and fruitiness, while vinegar preserves the color and brings freshness. Cinnamon adds a warm spice note that suits Christmas food and rich meat dishes especially well.
