Instructions
Bring the water to a boil in a large pot.
Add the stew meat and bring to a boil again. Skim off any foam from the surface.
Reduce the heat and let the meat simmer gently for about 1.5 hours, until it starts to become tender.
Peel the onion, celeriac, rutabaga, potatoes and carrots. Rinse the leek well. Cut all the vegetables into even pieces.
Add the vegetables, stock cubes, salt and freshly ground pepper to the pot.
Let the soup simmer for about 20 more minutes, until the vegetables are tender and the meat is completely tender.
Season with more salt and pepper if needed before serving.
