Tips & tricks
Add warm or lukewarm stock little by little while whisking. This makes it easier to get a smooth sauce without lumps, and gives you better control over how thick the gravy becomes.
Did you know?
Norwegian brown sauce gets its color and flavor from the roux, where butter and flour are gently browned before stock is added. The darker the roux becomes, the deeper and nuttier the sauce will taste. This balance of browned roux, stock and seasoning is what makes the sauce a classic in Norwegian comfort food.
