Instructions
Place the confit duck legs in the air fryer and cook at 180 degrees for about 20 minutes, until the skin is crisp.
Pull the meat from the bones and tear it into smaller pieces. Return the duck meat to the air fryer and cook for about 5 more minutes, until extra crisp.
Cut the cucumber, celery and spring onion into thin pieces. Mix the vegetables with the salad leaves in a large bowl.
Stir together hoisin sauce, honey, peanut butter, lime juice and grated ginger into a smooth dressing.
Toss the dressing with the salad just before serving.
Top the salad with crispy duck pieces, panko and roughly chopped peanuts.
