Add coconut milk, chia seeds, honey, cocoa powder and vanilla extract to a powerful blender or tall container.
Blend for 30 to 60 seconds, until smooth, thick and creamy.
Taste with a little extra honey or cocoa powder if you want a sweeter or stronger chocolate flavor.
Pour the mousse into a bowl or serving glasses.
Cover and refrigerate for at least 2 to 3 hours, preferably overnight, until the mousse has set.
Stir lightly before serving and serve cold.
