Tips & tricks
Make sure the water is not boiling hard when the salmon is added. Gentle poaching gives neater flakes and less risk of dry fish.

Boiled salmon stays juiciest when it poaches gently in hot water instead of boiling hard. The mild fish gets a clean flavor, while cucumber salad with vinegar and sugar gives classic Norwegian freshness. Sour cream and boiled potatoes make the serving rounded, simple and traditional.
