Irish Soda Bread

What better way to start celebration of St. Patrick’s day than by making Irish Soda Bread. It is a bread that takes 5 minutes to mix. It is a quick and delicious bread.

It was during a trip to Ireland that I started to make soda bread on the weekends. The scent of freshly made bread has become the standard in our home.

Luckily soda bread is sooo easy to make!

When making soda bread, it is important to make the dough with the right liquid to dry ratio. You know you have the right consistency when you cut the dough into 4 pieces and the knife comes out relatively clean.

How much liquid to add depends on what kind of flour you use and also the weather (humidity and temperature). I have found it is easier to make a sticky dough and gradually add flour to achieve the perfect consistency.

First things first……. turn on the oven to 200 C

Ingredients:

  • 150 gr. regular wheat flour
  • 2 ml. salt
  • 2 ml. baking powder
  • 170 gr. kefir (cultured milk, or butter milk)
  • ca. 50 gr flour for dusting and working the dough.

Mix flour, salt, baking powder.

Add kefir and mix. Continue mixing the extra flour until the dough is workable and not too wet.

Dust a working surface, knead and add flour as needed until the dough is soft Be careful not to overwork the dough. Soda bread is a bread that is best when not worked too much.

Shape into a round shape, flatten the top and cut a cross on top so as to divide into four pieces.

Avoid direct heat by placing a tray between the bread and the oven heating elements.

Bake for 30-35 minutes.

Wrap in a towel until ready to serve. Soda bread is best warm.

AN ORANGE SHOULD BE MORE THAN ORANGE

I came down with a cold recently, so one of the first thing I did before the full force of the symptoms arrived was to go to the store and stock up on what I knew I was going to need for the next few days of misery. For me that meant tissues, oranges and ingredients for my mom’s very comforting chicken zucchini soup.

So, I bought three different types of citrus. Navel oranges, mandarins and blood oranges. I was amazed at the lack of flavor and aroma of the first two.  This discovery became evident when I tasted the blood oranges. They were rich in not only flavor but also aroma without the sourness of the first two.

There are surely many places to buy blood oranges in Oslo. I got mine at Jacobs at Holte. This store can be a bit pricey but the selection is the best in Norway.  This is the place to go when you need a lot of specialty item and don’t have the time to run around town looking for what you need.
